The Produttori Associati

Produttori Associati is a company of garlic producers from Nubia.

The company was established in 2003 and through its members it shows to have a wide and decades-long experience in the field of garlic cultivation.

The main target for the company is to develop one of the most interesting typical products in Western Sicily, that is the "red garlic" from Nubia.

The Nubia Red Garlic is produced both in the country of Nubia and in some areas of Paceco, Trapani, Erice, Marsala and Salemi thanks to their particularly fertile fields and the temperate climate.

Both for sowing and for harvesting, people still follow ancient traditions for the production of red garlic and the quality is always excellent...

...This is the result of a long experience which is handed down from father to son.

The sowing

During cultivation, people adopt appropriate techniques like crops rotation, in order to avoid an overworking and a gradual impoverishment of the same field.

The Nubia Red Garlic is cultived on tipically clayey soils and fit in parallel lines far 65cm. the one from the other one.

The sowing season usually occurs from December to the first half in February. It often depends from the weather conditions.  

The bulbs are picked early in June, especially at night or early in the morning to makeeasy the manual twisting of the plants whose leaves are still humid.

Nubia: a plant of Nubia Red Garlic

The Nubia Red Garlic is a bulb composed of twelve cloves whose external tunic is white. The inner tunics, whose color is vivid red, give the name to the Nubia Red Garlic.

Accordingly to the tradition the garlic is manifactured in large plaits made by one hundred bulbs, commonly called heads.

According to the diameter of the bulb, the plait, or trizza, is called cucchia rossa (50 millimiters), corrente (40 millimeters), cucchiscedda (30 millimeters) or mazzunedda (20-25 millimeters).
